But here is one way we do TRY and stay healthy. (Although, now that I think about it, my son wouldn't touch this with a ten foot pole.)
BROWN RICE WITH ROASTED VEGGIES AND BLACK BEANS
Cut up a bunch of veggies...any kind you would like. This time I used zucchini, yellow summer squash, red onion and asparagus. Then toss them in some Extra Virgin Olive Oil and some Mrs. Dash Table Blend (or salt and pepper, but I am cutting out salt...)
Preheat the oven to 425 degrees.
Put the veggies on a cookie sheet. Spread them out.
Put into the oven for about 30 to 40 minutes. Stir it up every once in a while. I like to have some of the veggies sort of crispy, so I leave it in longer. Eyeball it.
Meanwhile, make up a batch of brown rice and open up a low sodium can of black beans. Drain the beans.
When the veggies and the rice are done, toss them together. Add the black beans and sprinkle with a generous amount of Parmesan Cheese, to taste. Adding shredded chicken to this is very delish. You can buy a rotisserie chicken at the supermarket.

So sorry to hear your son is so sick! I've always heard that Mono is bad stuff. You might try 1500 units of Vit.C and 1000 Vit.E every three hours, if he will take it. It builds the immune system fast! Also drinks lots of water.
ReplyDeleteIt detoxes and rebuilds.I do this anytime I get to feeling sick. I never see a doctor except for prevenative stuff! I don't remember the last time I took antibiotics! Maybe twenty years ago?

Mmmmmm that looks good. Hope your son is better soon - but I'm afraid this sort of thing just takes time, and a good mom to watch over him.

That is how I cook almost all of my veggies - I particulary like potatoes, butternut squash and brussel sprouts! It also tastes great if you coat them with fat free Italian Dressing. Yummo!!!
ReplyDeleteI know mono can put you out of commission for a month or more. Lots of rest, drink lots of liquids and don't go out for sports for at least a month after you start feeling better. Do what your body tells you to do...about resting.If he has a sore throat...popsicles, tea with honey, hard candy, or chew gum.People joke about it sometimes, but it's no joking matter when you have it.I hope he starts feeling better soon. It's a worry for Moms, when our kids don't feel up to par.
